Hi! We’re Brendan and Tinky—owners, operators, coffee-pourers, and dish-washers at Minori Pantry. We’re also a husband-and-wife team with a love for good food, good coffee, and great conversations.
The idea for Minori Pantry began as a dream to do something for ourselves. After years of working in high-pressure careers—Brendan as a police officer, federal agent, and private contractor in the Middle East, and Tinky as a registered nurse and emergency specialist in some of the country’s most remote regions—we were ready for a change.
We imagined a place that brought people together, served nourishing meals, and made healthy, whole food more accessible to locals. After living overseas and falling in love with a tiny seaside village in Italy called Minori (where we eloped, by the way!), we came home to Kyogle and got to work.
We opened Minori Pantry in 2021 and have been growing ever since—shifting from our original vision of a bulk food store and café, to focusing solely on the café and community we love.
Why the name ‘Minori’? It honours that little village on the Amalfi Coast and all the joy we found there. Later, we discovered Minori also means “fruitful harvest” in Japanese. How perfect is that?
Our café reflects our values: simple, delicious food, a strong connection to our local community, and a whole lot of heart. Thanks for being part of our story.
